This is the most simple, budget friendly and delicious soup you could make. Doesn’t take a lot but it’s full of flavor and packs a lot of vitamin c in it! Perfect for this cold in weather and cold in illness season!

Ingredients:

5 or 6 large carrots

1 onion

2 cloves of garlic

About 4 cups of the stock of your choice

Set a large pot over medium heat and add your roughly chopped onions, carrots and garlic. You will be blending it up so the size of chopping isn’t so important.

Pour your stock over the top until everything is covered. It should be about 4 cups but you may need more depending on your pot size.

Let the soup boil for about 30 minutes or until the carrots and onions are soft.

In a seperate pan, boil your stars according to package directions. Remember to salt your pasta water!

I like to use a hand blender in the pot but you can use a stand blender if that’s what you have available and blend your soup until it’s smooth. This is when you may want to add a pinch of salt and pepper.

Drain your stars and add them to the pot and that’s it!

I like to top it with some parmesan and serve it along side a slice of sourdough or a sourdough roll! It’s delicious, easy and great for you! Hope you make a pot and tell me what you think!
