Meet Doughlores!

She came to life in our home almost one week ago. She started as just a little baby and now she’s on two feeds a day! Can you believe that? They grow so quickly. Oh, I should explain. She’s my sourdough starter.

It might sound like I’m describing a baby or a pet and to be honest, she’s a bit of both. I’ve always been hesitant to start a sourdough starter because it’s work and the discard really confuses me but some feedback I’m heard at the farmers market is that the people want sourdough. So I heard you and here she is! Like all of us, she only gets better with time and something I find really cool is that she is uniquely Elgin sourdough. Sour dough develops flavor from it’s surroundings and as she’s raised in Elgin, she’s unique to the flavors of our air and water.

So make sure to come and see her babies at the market. Or take some to out of town visitors and show them how we do sour dough in Elgin!
