Caprese Bread Salad
While it might seem wrong to call this a salad, I’m a rule breaker. I love Country bread. It’s my personal favorite. All I need is some butter on it and I’m good. I do understand though the need for a little more than bread and butter so let me show you a great way to use your Country bread. This is a very simple recipe that can be customized however you might prefer it.
Here’s what you’ll need.
Country Bread,
Ripe Tomatoes
Cannellini beans/ Navy Beans
Fresh Basil
BaLsamic Vinegar
Heat your oven to 400. Cut the bread into decent size cubes, place on a baking sheet and toss with some olive oil. Bake in the oven for about 10 minutes.
Cut up the tomatoes and place them in a large bowl. Add the toasted bread and let the tomato juices soak into the bread.
Drain and rinse the beans and add to the mix.
Add some chopped basil and drizzle the Balsamic and youre done! It’s great served at room temp but it will keep just fine in the fridge for a day or two if you prefer it cold.
